Two-ingredient gluten-free pancakes for a healthy Shrove Tuesday

These healthy two-ingredient pancakes are easy, delicious and can be enjoyed by everyone. Dairy-free, gluten-free and low-carb, these pancakes only take 15 minutes to make – and are perfect for anyone looking to satisfy their sweet tooth this Shrove Tuesday.

Two-ingredient pancakes

Prep time: 5 min

Cook time: 10 min

Serves: 1


1 medium-sized banana

2 medium-sized egg whites

1 medium-sized egg


1. Combine banana, egg whites and whole egg in a food processor or small smoothie blender, process until smooth.

2. Heat a medium non-stick frying pan over medium heat.

3. Pour mixture into the pan to make three pancakes, leaving space between each one.

4. Cook 20 seconds each side or until golden. Serve.


These pancakes brown very quickly so keep a close eye on them.

You can swap banana for 1/3 cup pureed apple.

Serve with strawberries, banana and cinnamon.

Feel free to top with 99 per cent fat-free plain yoghurt (contains dairy).
